NACHOCHIPS WITH GUAC & BLACK BEANS

INGREDIENTS FOR NACHOCHIPS :-

1 Cup Maize Flour (makai ka atta)

 1⁄2 Cup Wheat Flour/ atta

 1 Tsp freshly ground Pepper(crushed)

 Tsp Salt as per taste

 2 Tbsp Oil


INGREDIENTS FOR BLACK BEANS:


 2 Tsp Olive Oil

 1⁄4 Cup chopped Onions

 1 tsp Garlic (finely chopped)

 Black bean tin

 2 Tbsp chopped cilantro

 1 tsp cumin

 Salt as per taste

GARNISHING:


Cilantro (wholeleaves) & Cream Cheese.


INGREDIENTS FOR GUAC:


 1 Avocados (ripe)

 2 Tbsp Onion (finely Chopped)

 2 Tbsp Tomatoes (finely Chopped) (deseeded)

 2 Tsp fresh cilantro (chopped)

 1 Tsp jalapeno pepper (seeds removed and finely Chopped)

 1⁄2 Tsp Garlic (Finely Chopped)

 1 Tsp lemon juice

 1⁄4 tsp Black salt

 Salt as per Taste

METHOD FOR NACHOCHIPS:


Take a large mixing Bowl; add maize flour, wheat flour, pepper, salt and oil. Mix well making sure all the spices is combined well. Now add water and start to knead the dough. Make sure the dough should be stiff and smooth.


Pinch ball sized dough, and dust with wheat flour. Roll slightly thick, dusting wheat flour. Roll slightly thick, dusting wheat flour as required. Prick the roll with a fork, preventing from puffing up while frying now trim the sides and cut into triangle pieces.


Take fry pan heat the oil for frying, drop the triangle chips into the medium hot oil. Fry on low medium flame stirring in between, fry until the nachos chips turn crisp and golden brown.


Drain off the chips over kitchen paper.


METHOD FOR MEXICAN BLACK BEANS:


In a Small sauce pan, heat the olive oil over medium heat. Add the Cumin, Garlic and Onion and cook for 3-4 minutes, just until the onions begin to soften.


Add the black beans with puree, cilantro, and salt. Stir well and reduce heat to medium low. Allow to cook for 15-20 minutes, stirring occasionally.

Serve sprinkled with more chopped cilantro and cream cheese if desired.


METHOD FOR GUACA:

Slice the avocados in half, removed the pit and skin and place in a mixing bowl. Mash the avocado with a fork and make it as chunky or smooth.

Add finely diced onions, fresh cilantro, jalapeno, lemon juice, Chopped garlic and Black salt as per taste and stir together.
